heirloom Tomato Salad

This is a great way to use heirloom tomatoes when fresh and in season. This is a basic recipe that can be adapted by adding fresh herbs such as dill and parsley, some feta cheese or a sprinkle of parmesan. If available, dress the finished salad with a few micro greens!

Heirloom tomatoes. Cut small ones in half and quarter slice larger ones.

Extra Virgin Olive Oil Balsamic Vinegar (white if you have it)

Coarse Sea Salt and Fresh ground black pepper

Chopped Basil or herb of choice

Arrange heirloom tomatoes on a platter. Sprinkle with coarse sea salt and fresh ground pepper. Drizzle with olive oil and vinegar. Add basil or other herbs. Serve

Optional: Sprinkle with feta cheese and micro greens.
