Grandma B's Spinach Salad
5 oz of fresh spinach.
1 oz micro-greens
½ small red onions thinly sliced
½ small red or yellow pepper, thinly sliced
Fresh strawberries, hulled and halved or sliced
Toss all ingredients and serve with dressing.
3 Tablespoons of strawberry fruit spread. Grape or any jam or jelly works.
2 teaspoons of balsamic vinegar
1 teaspoon of virgin olive oil
1 teaspoon of safflower oil or canola oil
1/8 teaspoon salt
¼ teaspoon red pepper flakes
Mix all ingredients and serve with salad on the side. Let stand for at least 15 minutes. This dressing can be made in advance and stores very well in the frig.
This recipe is very versatile. We have either used, substituted, or added cantaloupe, berries, peaches, walnuts, feta cheese, blue cheese, or fresh cubed avocado added right before serving. Spinach is my favorite but any greens or lettuce mix will work.
